Franck Fortier, Baking Instructor and 2024 Bakery World Champion

Today, we’d like to introduce you to Franck Fortier, baking instructor for Minoterie Girardeau and Atelier m’alice trainer. In this article, this passionate baker tells you all about his career and his daily life as a baking instructor.

A tour of France to learn the trade

Franck Fortier, now baking instructor, admits that he has alaways wanted to do this job. He admits that this desire came from his relatives and close family.  

 “I have two older brothers who are bakers so that must have steered me in the right direction!”.

After obtaining a CAP (Certificate of Professional Aptitude) in Bakery in 2006, Franck Fortier boarded on a tour of France with the Compagnons du Devoir. After two years of training all over France, Franck obtained his Brevet Professionnel.

Once he had obtained his diplomas, he refined his skills by working in many bakeries: “For 6 years, I changed companies regularly, which taught me to adapt to each boss and to regional specialities.”

This experience helped sharpen his skills. He then became a head baker specilizing in sourdough products.

Since then, he has been a “baking instructor” with us at Minoteries du Château, and works as a trainer on a national level for our Atelier m’alice training center.

A baling instructor who strives for excellence every day

Franck’s passions include working with living matter and transforming ingredients into grat loaves.

Although he is passionate about his profession, his desire to share that lead him to become a baking instructor :

“I wanted to pass on to customers what I’d learned, but I also wanted to learn from their work!”.

An attentive trainer to help you perfect your baking skills

Franck particularly enjoys talking to bakers who are passionate about their trade and the world of baking.

“What inspires me is talking to customers. I like to identify their problems and do everything I can to meet their needs.”

This humble professional works on a daily basis in bakeries, particularly those based in the Great West of France. The goal of his intervention? To support artisan bakers wishing to improve their skills, to help them master their baking techniques (especially sourdough), their organization, or to help them develop their creativity by launching new products in their bakery, for example.

Expertise recognized through results in national and international competitions

Found of challenges, he decided to take part in the Coupe de France de Boulangerie at the SIRHA trade show in Lyon in 2021. He teamed up with Mathieu Paulmery, also a Atelier m’alice instructor, and Adrien Bazoge. Together they trained for weeks.

The trio of enthusiasts competed for Pays-de-la-Loire departement, at SIRHA 2021.

Together, they won the first prize in the 15th Coupe de France de la Boulangerie. A reward highligting the team and Franck Fortier’s meticulousness, expertise and passion about the craft.

This victory gpt him spotted and selected (in November 2022) for the Coupe du monde la Boulangerie.22 candidates entered to make up the French team: 1 candidate in the bread category (Franck), 1 candidate in the viennoiserie category (Fabien Nolay), and one candidate in the artistic category (Xavier Sacriste).

On January 22, 2024, Franck Fortier won the Coupe du Monde de la Boulangerie at the Sirha Europain Show in Paris with the rest of the team, namely: Xavier Sacriste, Fabien Nolay and their coach.
